Steps
1. Cut the avocado in half, remove the pit, and scoop out the flesh into a bowl.
2. Mash the avocado with a fork until smooth.
3. In a small pan, melt the butter over medium heat.
4. Add the diced peppers to the pan and sauté for 2-3 minutes until they start to soften.
5. Add the cooked beans to the pan and stir until heated through.
6. Push the beans and peppers to one side of the pan and crack the eggs into the empty space.
7. Cook the eggs to your desired doneness, seasoning with salt and pepper.
8. Place the mashed avocado in a bowl and top with the beans, peppers, and fried eggs.
9. Garnish with additional salt and pepper, if desired.
