1. Preheat your oven to 375°F (190°C).
2. In a small bowl, mix together the Dijon mustard, honey, olive oil, garlic powder, salt, and pepper to create the glaze.
3. Place the chicken breast on a baking sheet lined with parchment paper.
4. Brush the mustard glaze evenly over the chicken breast.
5. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
6. Remove from the oven and let rest for 5 minutes before slicing.
7. Garnish with fresh parsley before serving.
