Steps

1. Rinse the quinoa under cold water and drain. 2. In a saucepan, bring the vegetable broth to a boil. 3. Add the quinoa and reduce to a simmer. Cover and cook for 15 minutes or until the quinoa is fluffy and liquid is absorbed. 4. While the quinoa is cooking, heat a small skillet over medium heat. Add the mixed nuts and toast for about 5 minutes, stirring frequently, until fragrant. 5. In a bowl, combine the cooked quinoa, toasted nuts, cherry tomatoes, and cucumber. 6.
