Steps
1. Rinse the quinoa under cold water and drain.
2. In a saucepan, bring the vegetable broth to a boil.
3. Add the quinoa and reduce to a simmer. Cover and cook for 15 minutes or until the quinoa is fluffy and liquid is absorbed.
4. While the quinoa is cooking, heat a small skillet over medium heat. Add the mixed nuts and toast for about 5 minutes, stirring frequently, until fragrant.
5. In a bowl, combine the cooked quinoa, toasted nuts, cherry tomatoes, and cucumber.
6. Drizzle with olive oil, lemon juice, and season with salt and pepper. Toss to combine.
7. Serve warm, garnished with fresh parsley.
