Steps
1. Preheat the oven to 375°F (190°C).
2. In a bowl, mix together the diced pear, chopped walnuts, parsley, thyme, salt, and pepper.
3. Carefully cut a pocket into the chicken breast, being careful not to cut all the way through.
4. Stuff the pear and walnut mixture into the pocket of the chicken breast.
5. Secure the opening with toothpicks or kitchen twine.
6. Season the stuffed chicken breast with salt and pepper.
7. Place the chicken breast in a baking dish and bake for 25-30 minutes, or until the chicken is cooked through and the juices run clear.
8. In a small saucepan, combine the pear juice, honey, and Dijon mustard. Cook over medium heat until the sauce thickens slightly.
9. Remove the chicken from the oven and let it rest for a few minutes before serving.
10. Drizzle the pear glaze over the stuffed chicken breast and serve hot.
