Potato Bread Rolls

1. Peel and boil the potato until soft, then mash it until smooth. 2. In a bowl, combine the warm water, sugar, and yeast; let it sit for 5 minutes until frothy. 3. In a large mixing bowl, combine the mashed potato, flour, salt, olive oil, and garlic powder (if using). 4. Add the yeast mixture and knead until a soft dough forms. 5. Cover the dough and let it rise in a warm place for about 1 hour, or until doubled in size. 6. Preheat the oven to 375°F (190°C). 7. Divide the dough into small balls and place them on a baking sheet. 8. Bake for 20-25 minutes, or until golden brown. 9. Let cool slightly before serving.
