Steps

1. Rinse the quinoa under cold water and drain well. 2. In a small pot, combine quinoa and water, bring to a boil, then reduce heat, cover, and simmer for about 15 minutes or until water is absorbed. 3. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork. 4. In a large bowl, combine the cooked quinoa, black beans, cherry tomatoes, cucumber, and avocado. 5. In a small bowl, whisk together olive oil, lime juice, salt, and pepper. Pour over the salad and toss gently to combine. 6. Garnish with fresh cilantro before serving.
