Steps
1. Rinse quinoa under cold water, then cook in 1/2 cup water until fluffy, about 15 minutes. Set aside to cool.
2. In a small bowl, whisk together white wine, olive oil, mustard, minced garlic, salt, pepper, and mixed spices to make the vinaigrette.
3. In a mixing bowl, combine diced celery, grated apple, thin apple slices, and chopped onion.
4. Add cooled quinoa to the bowl and pour the vinaigrette over the salad.
5. Toss everything gently to combine and allow flavors to meld for 5 minutes before serving.
