Steps
1. Heat vegetable oil in a skillet over medium heat.
2. Add diced bell peppers, tomatoes, and onions to the skillet. Sauté for 2-3 minutes until slightly softened.
3. Add cooked rice, corn kernels, and black beans to the skillet. Sprinkle cumin powder, paprika, salt, and pepper. Stir well to combine and cook for another 2-3 minutes.
4. In a separate pan, fry an egg to your desired doneness.
5. Transfer the rice mixture to a bowl and top with the fried egg.
6. Garnish with chopped cilantro, sliced avocado, and hot sauce if desired.
