Steps

1. Preheat oven to 200°C (400°F). 2. Season the chicken breast with salt, pepper, and half the thyme leaves. 3. Heat olive oil in an oven-safe skillet over medium-high heat. 4. Sear the chicken breast for 2-3 minutes on each side until golden. 5. Transfer the skillet to the oven and roast the chicken for 10-12 minutes until cooked through. 6. Remove chicken and keep warm. 7. In the same skillet, add garlic and sauté for 30 seconds. 8. Add grapes, remaining thyme, and white wine or broth; cook for 5 minutes until grapes soften. 9. Stir in butter and season sauce with salt and pepper. 10. Serve the chicken topped with grape and thyme sauce.
