Steps

1. Preheat the oven to 400°F (200°C). 2. Season the chicken breast with salt and pepper, then grill or pan-fry until cooked through. Let it rest for a few minutes, then slice it into thin strips. 3. Place the grapes on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper. Roast in the preheated oven for 10-12 minutes, until they start to burst and caramelize. 4. In a small bowl, whisk together the balsamic vinegar and olive oil to make the dressing. Season with salt and pepper. 5. In a large salad bowl, combine the mixed greens, roasted grapes, sliced chicken breast, crumbled feta cheese, and toasted walnuts.
