Steps
1. Preheat your oven to 350°F (175°C).
2. In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
3. Add the egg yolk and mix until combined.

5. Roll the dough into small balls, then flatten them slightly and place them on a baking sheet lined with parchment paper.

7. For the filling, beat together the cream cheese, granulated sugar, and vanilla extract until smooth.
8. Once the cookies are cool, spread or pipe a dollop of vanilla cream on the flat side of half the cookies, then sandwich with the other half.
