1. Preheat your oven to 350°F (175°C). 2. In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy. 3. Add the egg yolk and mix until combined. 4. Sift in the flour and salt, then add the vanilla extract, mixing until a dough forms. 5. Roll the dough into small balls, then flatten them slightly and place them on a baking sheet lined with parchment paper. 6. Bake for 12-15 minutes or until the edges are golden brown. Let them cool completely. 7. For the filling, beat together the cream cheese, granulated sugar, and vanilla extract until smooth. 8. Once the cookies are cool, spread or pipe a dollop of vanilla cream on the flat side of half the cookies, then sandwich with the other half. 9.
