Salmon Avocado Sushi Roll

Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a pot and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes. Remove from heat and let it sit, covered, for 10 minutes. In a small bowl, mix rice vinegar, sugar, and salt until dissolved, then fold this mixture into the cooked rice. Place a bamboo sushi mat on a flat surface and lay a sheet of nori shiny side down. Wet your hands to prevent sticking and spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top. Arrange slices of salmon and avocado in a line across the rice. Using the mat, carefully roll the sushi away from you, pressing gently to form a tight roll. Seal the edge with a little water. Slice the roll into bite-sized pieces with a sharp knife. Serve with soy sauce, pickled ginger, and wasabi.
