
Steps
- Soak the dried beans in water overnight. Drain and rinse.
- In a large pot, sauté the onion and garlic until fragrant.
- Add the soaked beans, carrot, celery, diced tomatoes, vegetable broth, paprika, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1-2 hours until beans are tender.
- Adjust seasoning if needed. Serve hot, garnished with fresh parsley.
