Steps
1. In a small saucepan, bring the vegetable broth to a simmer.
2. Add the whole grain cereal and cook according to package instructions until tender.
3. Meanwhile, poach the egg in a separate pot of simmering water for about 3-4 minutes until the white is set but the yolk is still runny.
4. Once the cereal is cooked, drain any excess liquid and stir in the cherry tomatoes, olive oil, salt, and pepper.
5. Transfer the cereal mixture to a bowl and top with the sliced avocado and the poached egg.
6. Garnish with fresh herbs and serve immediately.
