Steps
1. In a small pot, bring water to a gentle simmer and poach the egg for about 3-4 minutes until the whites are set but the yolk is still runny.
2. In a skillet, heat olive oil over medium heat and sauté the fresh spinach until wilted, about 2-3 minutes.
3. In a bowl, layer the whole grain cereal, followed by the sautéed spinach.
4. Carefully place the poached egg on top of the spinach.
5. Drizzle with lemon juice, and season with salt and pepper. Optional: sprinkle grated cheese on top.
