Steps
1. Heat olive oil in a small pan over medium heat.
2. Add diced bell peppers and sauté for 3-4 minutes until softened.
3. Add diced tomatoes and spinach, cooking for an additional 2-3 minutes until spinach wilts. Season with salt and pepper.
4. In a separate pot, bring vegetable broth to a simmer. Add whole grain cereal and cook according to package instructions, usually about 5 minutes.
5. While the cereal is cooking, poach the egg in simmering water for about 3-4 minutes until the whites are set but the yolk remains runny.
6. Once the cereal is ready, serve it in a bowl. Top with the sautéed vegetables and place the poached egg on top.
7. Garnish with fresh herbs if desired and enjoy your savory cereal bowl!
