Steps
1. In a small bowl, mix the jam, soy sauce, olive oil, garlic powder, salt, and pepper until well combined.
2. Preheat a skillet over medium heat and add a little olive oil.
3. Season the chicken breast with salt and pepper on both sides.
4. Place the chicken in the skillet and cook for about 5 minutes on one side until golden brown.
5. Flip the chicken and pour the jam mixture over it.
6. Cover the skillet and cook for an additional 5-7 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
7. Serve the chicken drizzled with the remaining glaze and garnish with fresh herbs if desired.
