Steps
1. Preheat your oven to 375°F (190°C).
2. Season the chicken breast with salt and pepper on both sides.
3. In a small bowl, mix the fruit jelly and soy sauce until well combined.
4. Heat olive oil in a skillet over medium heat, then sear the chicken breast for 3-4 minutes on each side until golden brown.
5. Transfer the chicken to a baking dish and pour the jelly mixture over the top.
6. Bake in the preheated oven for 20-25 minutes until the chicken is cooked through (internal temperature of 165°F/75°C).
7. Let it rest for a few minutes before slicing. Garnish with fresh herbs if desired and serve.
