Stuffed Bell Peppers with Quinoa and Black Beans

Steps

1. Preheat the oven to 375°F (190°C). 2. Cut the top off the bell pepper and remove the seeds and membranes. 3. In a skillet, heat olive oil over medium heat and sauté the onion and garlic until softened. 4. Add the cooked quinoa, black beans, cumin, smoked paprika, salt, and pepper. Mix well and cook for another 2-3 minutes. 5. Stuff the mixture into the hollowed-out bell pepper, packing it in gently. 6. Place the stuffed pepper upright in a small baking dish and cover with foil. 7. Bake in the preheated oven for 25 minutes. 8. Remove the foil and bake for an additional 10 minutes until the pepper is tender. 9. Garnish with chopped cilantro before serving.
