Steps
1. In a small pot, bring water and salt to a boil.
2. Add oats, reduce heat to low, and cook for 5 minutes, stirring occasionally until creamy.
3. While oats cook, heat olive oil in a pan over medium heat.
4. Add spinach and sauté until wilted, about 2 minutes. Season with salt and pepper.
5. Poach the egg in simmering water for 3-4 minutes until the white is set but yolk is runny.
6. Transfer cooked oats to a bowl, top with sautéed spinach and poached egg.
7. Sprinkle Parmesan cheese on top and season with additional salt and pepper if desired.
8. Serve immediately.
