3. In a mixing bowl, combine black pepper, garlic powder, paprika, dried thyme, and dried rosemary. Toss the cherry tomatoes, bell peppers, zucchini, and red onion in the spice mixture.
4. Spread the seasoned vegetables on a baking sheet lined with parchment paper. Drizzle with olive oil and toss to coat.
5. Roast the vegetables in the preheated oven for 15-20 minutes until they are tender and slightly caramelized.
