Steps
1. In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
2. Heat olive oil in a non-stick skillet over medium heat.
3. Add the chopped spinach to the skillet and sauté until wilted, about 1-2 minutes.
4. Pour the egg mixture over the spinach and cook for 2-3 minutes, gently lifting the edges to allow uncooked eggs to flow underneath.
5. Sprinkle the crumbled feta cheese on top.
6. Once the eggs are mostly set, gently fold the omelette in half and cook for another minute.
7. Slide onto a plate and serve hot.
