Steps
1. In a bowl, whisk the eggs until well beaten. Add salt and pepper to taste.
2. Heat olive oil in a non-stick skillet over medium heat.
3. Add chopped spinach to the skillet and sauté for about 1-2 minutes until wilted.
4. Pour the beaten eggs over the spinach, swirling the pan to spread them evenly.
5. Cook for 2-3 minutes until the edges begin to set.
6. Sprinkle crumbled feta cheese over one half of the omelette.
7. Carefully fold the omelette in half and let it cook for another minute.
8. Slide the omelette onto a plate and garnish with fresh herbs if desired.
