Steps
1. Crack the eggs into a bowl, add salt and pepper, then whisk well until fully combined.
2. Heat the ghee or coconut oil in a non-stick skillet over medium heat.
3. Pour the eggs into the skillet and let them cook undisturbed for about 1-2 minutes until the edges start to set.
4. Sprinkle the cheese evenly over the eggs, followed by the chopped chives and parsley.
5. Using a spatula, gently fold the omelette in half and cook for another 1-2 minutes until the cheese melts.
6. Slide the omelette onto a plate and serve immediately.
