Steps

1. In a bowl, whisk together the eggs, salt, and pepper until well combined. 2. Heat the olive oil in a non-stick skillet over medium heat. 3. Add the chopped spinach and sauté for about 1-2 minutes until wilted. 4. Pour the beaten eggs over the spinach, tilting the pan to spread them evenly. 5. Cook for about 2-3 minutes or until the edges start to set. 6. Sprinkle the crumbled feta cheese on one half of the omelette. 7. Carefully fold the other half over the feta and cook for another minute. 8. Slide the omelette onto a plate and garnish with fresh herbs, if desired.
