- In a bowl, whisk together the eggs, salt, and pepper until well combined.
- Heat the olive oil in a non-stick skillet over medium heat.
- Add the chopped spinach and sauté for about 1-2 minutes until wilted.
- Pour the beaten eggs over the spinach, tilting the pan to spread them evenly.
- Cook for about 2-3 minutes or until the edges start to set.
- Sprinkle the crumbled feta cheese on one half of the omelette.
- Carefully fold the other half over the feta and cook for another minute.
- Slide the omelette onto a plate and garnish with fresh herbs, if desired.
