Savory Stuffed Bell Peppers

These delicious bell peppers are stuffed with a flavorful mixture of quinoa, black beans, corn, and spices, making it a satisfying and nutritious main dish.

1. Preheat the oven to 375°F (190°C). 2. Cut the top off the bell pepper and remove the seeds. 3. In a bowl, mix quinoa, black beans, corn, cumin, chili powder, salt, and pepper. 4. Stuff the bell pepper with the quinoa mixture. 5. Place the stuffed pepper in a baking dish and cover with foil. 6. Bake for 25-30 minutes. 7. If desired, sprinkle shredded cheese on top and bake for an additional 5 minutes until melted. 8. Enjoy hot!


1 bell pepper, 1/4 cup quinoa, 1/4 cup black beans, 1/4 cup corn, 1/2 tsp cumin, 1/2 tsp chili powder, Salt and pepper to taste, 1/4 cup shredded cheese (optional)
