Steps
1. Heat 2 tablespoons olive oil in a small non-stick pan over medium heat.
2. Add mashed potatoes, season with salt and spread out in the pan.
3. Cook for 5 minutes or until golden brown.
4. Flip the cake over and spread the scallions across the top.
5. Continue to cook for 5 minutes or until the potato cake is golden brown.
6. Slice the cake and enjoy!
