Steps
1. In a pot, sauté the onions and garlic until fragrant. Add the carrots, potatoes, cumin, turmeric, and garam masala. Cook for 2-3 minutes.
2. Add the red lentils and vegetable broth. Bring to a simmer and cook for 20-25 minutes or until the lentils are tender.
3. In another pot, combine the basmati rice, water, turmeric, and salt. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes.
4. Serve the spiced lentil stew over the turmeric rice. Enjoy!
