1. Heat oil in a pan over medium heat and add cumin seeds. Let them splutter. 2. Add the finely chopped onion and sauté until golden brown. 3. Stir in the turmeric powder and red chili powder, cooking for an additional minute. 4. Add the cauliflower florets and capsicum, stirring well to coat with spices. 5. Pour in the water, season with salt, and cover the pan. Let it simmer for about 10 minutes, or until the vegetables are tender. 6. Once cooked, add garam masala and mix well. 7. Garnish with fresh coriander leaves and serve hot with chapati.
