
Steps
- Rinse the jasmine rice under cold water until the water runs clear.
- In a small saucepan, combine the rinsed rice, coconut milk, water, salt, chili flakes, and garlic powder. Bring to a boil over medium heat.
- Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and the liquid is absorbed.
- Meanwhile, prepare the vegetables by dicing the bell peppers and cucumber.
- Once the rice is cooked, fluff it with a fork and let it sit for a few minutes.
- Serve the coconut rice in a bowl, topped with the diced vegetables, chopped cilantro, and a drizzle of lime juice.
