Steps
1. Rinse the quinoa under cold water and drain.
2. In a small pot, combine quinoa and water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes until water is absorbed.
3. In a skillet, heat olive oil over medium heat. Add corn and sauté for 5-7 minutes until golden.
4. In a bowl, combine cooked quinoa, sautéed corn, cherry tomatoes, and avocado.
5. In a small bowl, whisk together lime juice, chili powder, salt, and pepper. Drizzle over the quinoa mixture and toss gently.
6. Garnish with fresh cilantro before serving.
