1. Cook the egg noodles according to package instructions until al dente. Drain and set aside. 2. Heat 1 tablespoon vegetable oil in a wok or large pan over medium-high heat. Add the noodles and stir-fry until slightly crispy, about 3-4 minutes. 3. Pour in the hot chili oil sauce and soy sauce, tossing the noodles to coat evenly. Season with salt and pepper to taste. Remove from heat and transfer to a serving plate. 4. In a small pan, heat oil for frying the shrimp. Toss shrimp with cornstarch and a pinch of salt. Fry shrimp until golden and cooked through, about 2-3 minutes per side. Drain on paper towels. 5. In another pan, fry the egg sunny side up until the whites are set but yolk remains runny. 6. Arrange the fried noodles on a plate, top with sliced scallions, fried sunny side egg, and mortadella slices. 7. Serve the fried royal shrimp on the side. 8. Enjoy your flavorful and hearty meal!
