Steps
1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
2. Add chopped onions and sauté until golden brown.
3. Stir in minced garlic and grated ginger, cooking for about 1 minute until fragrant.
4. Add the diced potatoes and cook for 5 minutes, stirring occasionally.
5. Mix in the chopped tomatoes, turmeric, red chili powder, and salt. Cook for another 10 minutes, until the potatoes are tender and the tomatoes break down.
6. Garnish with fresh coriander before serving.
