
Steps
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until golden brown.
- Stir in minced garlic and grated ginger, cooking for about 1 minute until fragrant.
- Add the diced potatoes and cook for 5 minutes, stirring occasionally.
- Mix in the chopped tomatoes, turmeric, red chili powder, and salt. Cook for another 10 minutes, until the potatoes are tender and the tomatoes break down.
- Garnish with fresh coriander before serving.
