Steps
1. Heat oil in a pan and add cumin seeds. Let them splutter.
2. Add onions, garlic, and ginger. Sauté until onions turn golden brown.
3. Add carrots, potatoes, and all the spices. Mix well to coat the vegetables.
4. Cover the pan and cook on medium heat for about 15-20 minutes, or until the vegetables are tender.
5. Garnish with fresh cilantro leaves and serve hot with rice or naan bread.
