Steps
1. In a large pot, heat some oil over medium heat.
2. Add the diced onions and minced garlic, and sauté until they turn golden brown.
3. Cut the chicken breast into small pieces and add it to the pot. Cook until it is no longer pink.
4. Add the diced carrots and cubed potatoes to the pot, and stir well.
5. Pour enough water to cover the ingredients, and bring the soup to a boil.
6. Reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes, or until the vegetables are tender.
7. Season with salt and pepper to taste.
8. Serve hot and enjoy!
