Steps

1. Peel and dice the carrots, onion, and potatoes. 2. In a large pot, heat some oil over medium heat. 3. Add the diced onion and cook until translucent. 4. Add the diced carrots and potatoes, and sauté for a few minutes. 5. Sprinkle the ground cumin, coriander, turmeric, salt, and pepper over the vegetables. 6. Pour in the vegetable broth and bring to a boil. 7. Reduce the heat, cover the pot, and let the soup simmer for about 20 minutes or until the vegetables are tender. 8. Using an immersion blender or regular blender, puree the soup until smooth. 9. Taste and adjust the seasonings if needed. 10. Serve hot, garnished with fresh parsley.
