Steps
1. Preheat the oven to 400°F (200°C).
2. In a small bowl, whisk together the soy sauce, honey, rice vinegar, minced garlic, and grated ginger to make the teriyaki sauce.
3. Place the salmon fillet on a baking sheet lined with parchment paper. Season with salt and pepper.
4. Brush the teriyaki sauce over the salmon fillet, reserving some for later.
5. Bake the salmon in the preheated oven for 12-15 minutes, or until cooked through and flaky.
6. Meanwhile, steam the mixed vegetables until tender-crisp.
7. In a separate pan, heat the sesame oil over medium heat. Add the steamed vegetables and sauté for 2-3 minutes.
8. Serve the teriyaki salmon with the steamed vegetables and drizzle with the reserved teriyaki sauce.
