Steps

1. Rinse the sushi rice under cold water until the water runs clear. 2. Cook the rice according to package instructions, usually in a rice cooker or on the stovetop. 3. In a small bowl, mix soy sauce and rice vinegar. Set aside. 4. Once the rice is cooked, let it cool slightly. 5. In a bowl, layer the rice, followed by diced salmon, avocado slices, and julienned cucumber. 6. Drizzle the soy sauce mixture over the top. 7. Sprinkle sesame seeds and add strips of nori on the side. 8. Serve with optional wasabi and pickled ginger if desired.
