1. Bring a pot of water to boil and cook the ramen noodles according to package instructions. Drain and set aside. 2. In a saucepan, heat the sesame oil over medium heat. Add sliced mushrooms and sauté until tender. 3. Add vegetable broth, miso paste, and chili paste to the saucepan. Stir well and let it simmer for 5 minutes. 4. Add baby spinach and cook for an additional 1-2 minutes until wilted. 5. In a bowl, place the cooked ramen noodles and pour the spicy miso broth over them. 6. Top with a soft-boiled egg, sliced green onion, and season with salt to taste. Serve immediately.
