Spicy Yogurt-Marinated Roast Chicken

1. In a large bowl, combine yogurt, salt, green chillies, red chilli powder, mint, curry leaves, turmeric powder, fennel seeds, ginger, and garlic. 2. Mix well to form a smooth marinade. 3. Coat the whole chicken with the marinade, ensuring it's well covered both inside and out. 4. Cover the bowl and marinate in the refrigerator for at least 2 hours, preferably overnight for maximum flavor. 5. Preheat the oven to 200°C (400°F). 6. Place the marinated chicken on a roasting rack in a baking dish. 7. Drizzle with vegetable oil and roast for 1 hour or until the internal temperature reaches 75°C (165°F). 8. Let the chicken rest for 10 minutes before carving and serving.
