Steak with Garlic Pea Purée

Steps

1. Season the ribeye steak with salt and pepper on both sides. 2. In a skillet over medium-high heat, add olive oil. Once hot, add the steak and cook for about 4-5 minutes on each side for medium-rare, or to your desired doneness. 3. Remove the steak from the skillet and let it rest for 5 minutes. 4. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. 5. Add the peas and a splash of water, cover, and cook for 3-4 minutes until the peas are tender. 6. Transfer the peas and garlic to a blender, add butter, and blend until smooth. Season with salt and pepper. 7. Slice the steak and serve it on a plate with a generous spoonful of the garlic pea purée. Garnish with lemon zest if desired.
