Steps
1. Heat sesame oil in a large skillet over medium heat.
2. Add garlic and onion and cook until fragrant and softened, about 3-4 minutes.
3. Add carrots to the skillet and cook for additional 2-3 minutes.
4. Add the cooked rice and season with salt and pepper to taste. Mix everything together.
5. Make two wells in the mixture and crack the eggs in each well. Scramble the eggs within the skillet and stir-fry for another 4-5 minutes.
6. Serve hot.
