Steps
1. Preheat your oven to 400°F (200°C).
2. Peel and cube the sweet potato, then toss with olive oil, salt, and pepper.
3. Spread sweet potato cubes on a baking sheet and roast for 25-30 minutes until tender and caramelized.
4. While the sweet potatoes are roasting, rinse the quinoa under cold water.
5. In a saucepan, combine the rinsed quinoa and vegetable broth, then bring to a boil.
6. Reduce heat, cover, and simmer for 15 minutes or until quinoa is fluffy and the broth is absorbed.
7. In a small bowl, mix lemon juice, salt, and pepper to create a dressing.
8. Once everything is cooked, combine the quinoa and roasted sweet potatoes in a bowl.
9. Drizzle with dressing and garnish with fresh parsley before serving.
