Steps
1. Heat the oil in a pan over medium heat.
2. Whisk the eggs in a bowl and season with a pinch of salt.
3. Pour the eggs into the pan and scramble until just set. Remove and set aside.
4. In the same pan, add chopped tomatoes, sugar, and salt. Sauté until the tomatoes are soft and juicy.
5. Add the scrambled eggs back into the pan and stir to combine. Cook for another minute.
6. Season with pepper and garnish with green onions if desired. Serve warm.
