Steps
1. Heat the vegetable oil in a skillet over medium heat.
2. Add in the potatoes and onion and cook until the potatoes start to become tender.
3. Add in the cherry tomatoes and cook until softened.
4. Add in the rice, stirring constantly, and cook for 3-4 minutes.
5. Add salt and pepper to taste, then simmer on low for 5-7 minutes.
