Steps
1. Heat olive oil in a large skillet over medium-high heat.
2. Add onions and bell pepper. Cook, stirring frequently until vegetables are soft and lightly brown.
3. Pour egg into the skillet. As the egg cooks, use a rubber spatula to gently stir and move the vegetables around so the egg can reach all areas of the skillet to cook evenly.
4. Once the egg is cooked on one side, fold the egg in half and cook for 1 more minute.
5. Serve with fresh salsa and avocado slices.
