Steps
1. Heat olive oil in a large skillet over medium heat.
2. Add mushrooms, onions, and bell peppers and sauté for 5-7 minutes, or until vegetables are cooked through.
3. Add cooked black beans, chili powder, garlic powder, and salt and pepper, to taste.
4. Place one tortilla in a skillet, and cover with half of the vegetable mixture.
5. Sprinkle vegan cheese over the vegetable mixture.
6. Place the second tortilla on top of the cheese and press down slightly.
7. Cook for 3-4 minutes on each side, or until golden brown and cheese is melted.
8. Cut into wedges and serve.
