Steps
1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
2. Add the garlic, onion, carrot, and potato to the skillet. Stir-fry for 5 minutes or until the vegetables are tender.
3. Add the cooked rice and tomato to the skillet. Stir-fry for an additional 3-4 minutes.
4. In a small bowl, mix together the soy sauce, sesame oil, salt, and pepper. Pour the sauce over the rice mixture and stir well to combine.
5. Cook for another 2-3 minutes, stirring occasionally, until the rice is heated through.
