Steps
1. Heat olive oil in a skillet over medium heat.
2. Season the chicken thigh with salt and pepper, then add it to the skillet, searing until golden brown on both sides.
3. Remove the chicken and set aside. In the same skillet, add the chopped onion and minced garlic, sautéing until softened.
4. Pour in the red wine, scraping any browned bits from the bottom of the skillet.
5. Add the chicken broth and thyme, stirring to combine.
6. Return the chicken to the skillet, cover, and reduce heat to low.
7. Simmer for 30 minutes, or until the chicken is cooked through and tender.
8. Serve the chicken with the wine sauce spooned over it.
