Steps
1. Rinse the quinoa under cold water.
2. In a small saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until the liquid is absorbed.
3. Meanwhile, prepare the vegetables: chop the cherry tomatoes, cucumber, and bell pepper.
4. Once the quinoa is cooked, fluff it with a fork and let it cool slightly.
5. In a large bowl, combine the quinoa, cherry tomatoes, cucumber, bell pepper, olives, and feta cheese.
6. Drizzle with olive oil and lemon juice, then season with salt and pepper to taste. Toss gently to combine.
7. Serve warm or at room temperature, garnished with fresh parsley.
